Dal Tadka is a popular Indian dish made of yellow lentils (usually split pigeon peas or toor dal) cooked with onions, tomatoes, and a blend of spices. The "tadka" refers to the tempering of spices in oil, often including cumin, mustard seeds, garlic, and dried red chilies, which is poured over the cooked lentils to enhance its flavor. To make it vegan, it's important to ensure that no ghee (clarified butter) is used in the tempering process, replacing it with a vegan-friendly oil like vegetable or coconut oil. This dish is known for its rich, aromatic flavors and is typically served with rice or Indian bread like roti or naan.
